HOMEMADE OAT MILK

This non-slimy Homemade Oat Milk recipe & technique takes only 5 minutes to make, and tastes so good! A much healthier & economical choice to store bought brands, this quick and easy oat milk recipe is a delicious dairy-free option with no added sugar or fillers. Just 4 ingredients and a little technique make this delicious nut free milk that is not slimy & grit free!

Instructions

  1. Place a nut milk bag over a very large measuring cup (8 cup - or a large bowl with a spout), and set aside.
  2. Add water and Medjool date (optional) to a high speed blender pitcher (see Note #1), and blend for 10-15 seconds until the date has broken up. Then add salt (optional), vanilla, and oats, and process for 20 seconds (not more time - see Note #2).
  3. Pour oat milk mixture through the nut milk bag, allowing it to drip naturally into the measuring cup or bowl, lifting bottom of bag from side to side (this might take a few minutes - see Note #3).
  4. Double strain through clean nut milk bag (see Note #4). Pour double strained oat milk into a large glass mason jar (32 ounces) or other large milk bottle with airtight lid (32 ounce). Store in the refrigerator, and enjoy within 7 days! Be sure to shake vigorously just before each serving.

Notes

  1. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe. If you omit the Medjool date from this recipe, skip the first processing. Just add all the ingredients to the blender, and blend for only 20 seconds.
  2. If you process longer than 20 seconds, the oats will break down even more and create a gritty & slimy texture to the oat milk. 
  3. Let gravity do the work! If you squeeze the bag, the milk will become slimy. Reserve the oat pulp for other recipes.

Step by Step Instructions

 
Prep ingredients for Homemade Oat Milk recipe.

PREPARATION

Organize all your tools and ingredients before you begin. Getting all your ingredients in one place at the beginning will shorten your prep time.

STEP 1

Place a nut milk bag over a very large measuring cup (8 cup - or a large bowl with a spout), and set aside.

Note: I find using this large 8-cup measuring cup makes it easier to strain without dripping all over the counter.

STEP 2

Add 4 cups filtered cold water, and 1 pitted & halved Medjool date (optional), to a high speed blender pitcher (see Note A below), and blend for 10-15 seconds until the date has broken up (photo not shown). Then add 1 pinch fine sea salt (optional), ½ teaspoon pure vanilla extract, and ½ cup organic old-fashioned rolled oats, and process for 20 seconds (not more time - see Note B below).

Note A: Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe. If you omit the date from this recipe, add all the ingredients to the blender, and blend for only 20 seconds.

Note B: If you process longer than 20 seconds, the oats will break down even more and create a gritty & slimy texture to the oat milk. 

STEP 3

Pour oat milk mixture through the nut milk bag, allowing it to drip naturally into the measuring cup or bowl, lifting the bottom of the bag from side to side (this might take a few minutes - see Note below).

Note A:  Let gravity do the work! If you squeeze the bag, the milk will become slimy. Lifting the bag back and forth, and allowing it to slowly strain without pressing on the oats will create a creamy and non-slimy oat milk. Resist the temptation of squeezing the nut bag or pressing down on the oats in the strainer, which will create an unappealing and slimy texture. Reserve the oat pulp for other recipes.

STEP 4a

Double strain by pouring the oat milk back into the clean blender pitcher, discard any pulp (or set aside to use for smoothies or other oat pulp recipes), rinse the nut milk bag well, and pour the oat milk through the nut milk bag once more. Stir milk, then pour double strained oat milk into a large glass mason jar (32 ounces) or other large milk bottle with airtight lid (32 ounce).

STEP 4a

Store refrigerated in an airtight container, and enjoy within 7 days. Be sure to shake vigorously before each serving, as the milk will separate. 

Note: If you don’t have one large airtight jar or milk jug, you can use two 24 ounce mason jars like I did in the photo.

SERVING

Shake vigorously, and serve chilled Homemade Oat Milk by the glass, on breakfast cereal, in smoothies, lattes, and many other recipes.

Note: Homemade Oat Milk will not foam very much when steamed or frothed, but it’s still delicious in cold or hot lattes.

Just 4 ingredients, a little technique, and a high speed blender make this wonderful nut free milk that is not slimy and grit free! Great for smoothies, breakfast cereal, lattes, and all types of dairy free recipes. 

This oat milk recipe makes a smooth, and clean tasting nut free milk that works well in many recipes. Its slightly sweet flavor comes from the oats, Medjool date, and vanilla. Although the date and vanilla are optional, they lend a lovely flavor to the oat milk. This oat milk has about the same viscosity as milk, so the mouthfeel is much more pleasant than other oat milk recipes with a super thick texture.

I did numerous tests to figure out the right combination of ingredients and the best technique to produce this non-slimy texture of oat milk. 

In my opinion, this recipe produces the perfect texture for Homemade Oat Milk. We all know that taste is subjective, so I recommend trying my recipe and then adjusting the quantities based on your own preferences. How do you ensure the best results from this recipe?

My 7 tips to making non-slimy Homemade Oat Milk:

  1. Use only cold filtered water and organic old fashioned rolled oats for this recipe. It can be room temperature, but not warm or it will “cook” the oats.

  2. Blend the Medjool date with the water first to reduce the time for processing the oats. This will help reduce the oat milk from becoming slimy. If omitting the date, skip this step.

  3. Use a high speed blender. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe. If you process longer than 20 seconds, the oats will break down even more and create a gritty texture to the oat milk. If you don’t have a high speed blender, you can use a regular blender, but it may take longer to blend (up to 30 seconds).

  4. A nut milk bag is a must for this recipe. Although I don’t really recommend using anything other than a nut milk bag, if you don’t have one, this next option will work in a pinch (but you may have to strain it three times or more). You can use a large fine mesh strainer covered with 1 or 2 layers of ultra fine cheesecloth.

  5. Let gravity do the work! If you squeeze the bag, the milk will become slimy. Resist the temptation of squeezing the nut bag or pressing down on the oats in the strainer. Allowing it to slowly strain without pressing on the oats will create a creamy and non-slimy oat milk.

  6. Double strain by pouring the oat milk back into a clean blender pitcher (or another measuring cup), discard any pulp (or set aside to use for smoothies or other oat pulp recipes), rinse the nut bag well, and pour oat milk through the nut bag or strainer again. Once strained, store refrigerated in an airtight container. 

  7. Reserve the oat pulp. It adds a delicious flavor, creamy texture, and a bit of added fiber to your smoothies. Just add 1 tablespoon to your smoothie ingredients, and blend! 

It’s time to customize and Pimp My Recipe. 

Pimp My Recipe:

  • Make it Sweeter: Add 2 Medjool dates instead of 1. 

  • Make it Unsweetened: That’s easy…just omit the Medjool date.

  • Make it Thicker: I prefer the consistency of this milk when using 4 cups of water. It still tastes rich and has a bit of creaminess to it, but it feels more like the texture of milk. If you like it thicker, use only 3 cups of filtered water to ½ cup oats. Don’t blend it longer, or squeeze the bag, as it will produce a slimy texture.

  • Make it Super Thick like Creamer: Use 4 cups of filtered water (or 3 cups water for ultra thick creamer) to 1 cup oats. Don’t blend it longer, or squeeze the bag, as it will produce a slimy texture. The other ingredient amounts remain the same, unless you want it sweeter. If so, add up to 2 Medjool dates.

  • Make it Thinner & Smoother: Triple strain the oat milk, making sure to rinse your nut bag and measuring cup or pitcher very well in between each straining. This will also reduce the sediment that settles at the bottom of the milk. Not to be redundant, but do not squeeze the oats when straining. If it’s still not thin enough for your taste, just add a bit of water (try 2 tablespoons at a time until you achieve your preferred consistency).
