It’s hard to believe that only three ingredients can create such great flavor. My method for roasting spaghetti squash is quite simple and brings out its natural sweetness. The Sicilian Pesto Sauce is garlicky, bright, and slightly spicy with tomatoes, a touch of lemon zest, and lots of fresh herbs. When combined they are a perfect match, resulting in a nutritious bite with huge flavor!

Chicken Dijon (Poulet Dijonnaise)
Chicken Dijon (aka: Poulet Dijonnaise, or Poulet à la Moutarde) is a traditional French dish from the Bourgogne-Franche-Comté region of France. Chicken breasts are pan seared, then bathed in a shallot, wine, and mustard cream sauce that is simmered with garlic and herbs. The tender chicken and rich, unctuous sauce will have you coming back for more. Delicious with my Roasted Fingerling Potatoes and Garlicky Green Beans (Haricot Verts). This recipe is also keto and gluten free!

My Lemony Lentil Salad is both healthy and delicious! Steamed brown lentils are marinated in a fresh lemon and herb dressing, then combined with tomatoes and parsley. A great make ahead recipe, this lentil salad is best prepared the night before to allow all the flavors to develop. This quick and easy recipe is also plant-based, dairy free, and gluten free!

Our Chicken Stuffed Poblano Peppers may very well become one of your favorite Southwestern style dishes to make at home. Mild poblano peppers are roasted, then stuffed with a deliciously spicy chicken filling, and topped with pepper jack cheese. Served right out of the oven, these yummy stuffed peppers are garnished with salsa verde and fresh cilantro. This Southwestern style dish is not too hot or too mild. Avocado Toast with Smoked Salmon
Our Avocado Toast with Smoked Salmon is a very quick and tasty, savory breakfast. Accompanied with a side salad, it also makes a wonderful and healthy light lunch. Creamy avocado slices are combined with thick sliced smoked salmon and briny capers, which are layered on toasted European-style whole grain bread. We finished it with a generous squeeze of fresh lemon juice and our homemade Quick Pickled Onions for a European style tartine (open faced sandwich).

Our Salmon Piccata is absolutely mouthwatering! Pan seared salmon is perfectly cooked, then bathed in a wine, butter & garlic sauce to create a melt-in-your-mouth worthy one pan main dish. Made right in the same pan as the salmon, the piccata sauce is filled with yummy ingredients like white wine, lemon, garlic, and capers. The salmon is then bathed in the buttery sauce to make it deliciously moist, and will leave you wanting more! This recipe is also keto friendly.
Lemon Pesto Pasta with Artichokes
There is nothing more comforting than a bowl full of pasta, and our Lemon Pesto Pasta with Artichokes is no exception.
