RASPBERRY MOJITO MOCKTAIL

Sweet, tart, and incredibly refreshing, this Raspberry Mojito Mocktail combines homemade Raspberry Simple Syrup, fresh lime, fresh raspberries, mint, and sparkling water for the perfect balance of bright raspberry and zesty citrus flavor. An easy, refreshing non-alcoholic drink for any occasion!

Mocktail:
  1. With the palm of your hand, roll lime(s) to soften and get the most juice from the lime(s). Cut lime(s) in half, and squeeze juice with a juicer.
  2. To a large drinking glass (21 ounces), add lime juice, mint, and Raspberry Simple Syrup, and gently muddle to bruise the mint and combine the ingredients. If using, add fresh raspberries (optional), and gently muddle only enough to barely bruise the fruit.
  3. Fill the glass halfway with ice, and pour just a little club soda (about 2 ounces). Stir well to combine. Add more ice to fill the glass, and pour remaining 2 ounces of club soda, and stir again. Garnish with optional ingredients (lime, raspberries, and/or sprig of mint), and serve immediately. Enjoy!

Notes

  1. This mocktail recipe was developed using my Raspberry Simple Syrup, which provides a moderate raspberry flavor to this mojito mocktail. The flavor of this mocktail is similar to a traditional Mojito Cocktail, which has a strong lime flavor. Whether you use a homemade recipe or store bought syrup, every simple syrup has a different strength and flavor. For the best balance of flavor in the mocktail, I recommend starting with 2 tablespoons of simple syrup. If you want a sweeter mojito mocktail with a stronger raspberry flavor, add up to 3 tablespoons of Raspberry Simple Syrup. Make this syrup ahead of time, and store it in the refrigerator in an airtight container for up to 2 weeks. 
  2. Makes one 8 ounce serving (19-20 ounces with ice).

This refreshing Raspberry Mojito Mocktail is a delicious, naturally fruity drink made with simple, wholesome ingredients and my homemade Raspberry Simple Syrup. Fresh lime juice adds a bright, zesty balance to the sweet raspberry flavor, while fresh mint and club soda make every sip wonderfully crisp and refreshing. This easy non-alcoholic raspberry mojito is perfect for summer gatherings, brunch, parties, or whenever you’re craving a vibrant and refreshing fruit mocktail.

Mojito cocktails are delicious, but adding raspberries is a game changer for this mocktail. 

A big thanks goes out to my cousin, Heima, who inspired me to create this mocktail. After sampling a few raspberry mojito mocktail recipes, she asked if I could develop one that might be better. I reviewed some of the recipes she tried and searched for others. I found that most virgin raspberry mojito mocktail recipes used sugary sodas or juices that were sweetened with corn syrup and filled with artificial ingredients and flavors. 

Based on the philosophy of Prep My Recipe, I intentionally steer away from artificial flavors and sweeteners, and use whole foods to create my recipes. I set out to develop a cleaner, more flavorful mocktail recipe with bold raspberry and lime flavor. The star and the base of this mocktail recipe is the bold raspberry flavor, which comes from my homemade Raspberry Simple Syrup. It’s an easy recipe that can be made ahead of time (up to 2 weeks). The rest was simple — use fresh ingredients like fresh squeezed lime juice, fresh mint, muddle a few fresh raspberries, and finish with a good quality club soda. The result is this delicious Raspberry Mojito Mocktail. 

If you enjoy cocktails but are looking for drink options without the alcohol, this Raspberry Mojito Mocktail is a great choice. You won’t even miss the alcohol!

How do you ensure the best results from this recipe?

My 5 tips to making this Raspberry Mojito Mocktail:

  1. High quality and fresh, organic ingredients. For the best flavor, use fresh, organic limes, raspberries, and mint. 

  2. To get the most juice out of your limes, roll them on the countertop before juicing. 

  3. Use homemade simple syrup. It makes such a difference in the flavor of this drink. You can really taste the fresh raspberries in my Raspberry Simple Syrup recipe.

  4. Don’t over-muddle the fresh raspberries in your mocktail, as you want larger pieces of fruit in this mocktail. If you over-muddle, you’ll end up with too many seeds floating around in your drink. Also, don’t over-muddle the fresh mint, as it will turn brown. You only want to bruise it in order to release the natural oils in the leaves. 

  5. Use a good quality club soda. My favorite is Fever-Tree premium club soda. It comes in 5 ounce cans, so it cuts down on any leftover soda going flat.
