RASPBERRY SIMPLE SYRUP

RASPBERRY SIMPLE SYRUP

Bright, vibrant, and bursting with fresh berry flavor, this Raspberry Simple Syrup is made with juicy fresh raspberries and a simple technique that extracts every bit of their natural sweetness and bold, fruity taste. Ingredients

Instructions

  1. To a 2 quart saucepan, add sugar, and water, and stir well to combine. Add raspberries, and stir continuously but gently over medium-high heat, until sugar is dissolved, and bring to a boil.
  2. As soon as it reaches a full rolling boil, remove from heat. Using a potato masher to mash the berries until they are thoroughly broken down (only seeds and some fruit bits remaining). Cover immediately, and steep for at least 45 minutes (or up to 1 hour).
  3. Place a fine mesh strainer on top of a 2 cup measuring cup, and triple strain syrup (see Note #2), gently pressing down on the seeds & pulp to extract the remaining syrup. Discard berry pulp and seeds. Cool syrup completely. Then using a small funnel, transfer syrup into an airtight glass bottle (7 or 8 ounce), and store refrigerated for up to 2 weeks.

Notes

  1. Although you could technically use frozen raspberries, I highly recommend using fresh for the flavor intensity it brings to the syrup. Frozen berries carry a lot of water, which also dilutes the bold flavor of this simple syrup recipe. 
  2. Triple straining works best for this recipe, as you need to ensure there is no fruit pulp or seeds remaining in the syrup. Otherwise, it will spoil more quickly. Use a strainer with very fine mesh and rinse the strainer well in between strainings, so no fruit particles are left floating in the syrup.
  3. Makes approximately ¾ cup (6-7 ounces). A total of 14-16 servings (1 tablespoon per serving).

My 5 tips to making this Raspberry Simple Syrup:

  1. For the brightest flavor, use fresh raspberries that are in season. 

  2. If fresh raspberries are not available, you can use frozen raspberries. Keep in mind that they carry a lot of water, which dilutes the bold flavor of this simple syrup recipe.

  3. As soon as the raspberries and sugar water comes to a boil, remove it from the heat source. Mash them right away, and immediately cover the saucepan with a lid to steep.

  4. 45 minutes of steeping is enough to provide a strong raspberry flavor. If you want it even bolder, steep for up to 1 hour. 

  5. Triple strain this simple syrup to ensure you end up with no pulp or seeds in your syrup. Be sure to rinse your fine mesh strainer in between each straining.
